Brisket Smoked On The Pit Boss Austin XL Onyx

We are smoking a Brisket on the Pit Boss Austin XL Onyx. The only seasoning I used was Kosher Salt and Coarse Black Pepper. Smoker was set to 250° and once the smoker came up to temp I placed the brisket in the smoker. When the internal temp reached 160° I pulled the brisket out and wrapped it and place it back into the smoker until an internal temp of 199° was reached. This brisket took about 6 1/2 hours.
