Serves: • 10 People. Ingredients: • ¼ cup (40g/1 ½ oz) Plain Flour • 1 tsp Mixed Spice. • ½ tsp Nutmeg or Cinnamon. • ½ cup + 1 tbsp (50g/1 ½ oz) Ground Almonds. • ½ cup (100g/3 ½ oz) Dark Brown Sugar. • 2 ½ cup + 1 tbsp (375g/13oz) Mixed Fruit. • 10 Glace Cherries, cut in half and quarters. • 1 ½ cup (100g/3 Ch½ oz) White Breadcrumbs. • 1 Small Apple, peeled and grated or diced. • ½ Small Carrot, peeled and grated. • 1 Lemon Zest and Juice. • ⅔ cup (150ml/5.07 fl oz) Guinness Irish Stout. • 2 Medium Eggs, beaten. • ¼ cup + 3 tbsp (100g/3 ½ oz) Butter, melted. Method: 1. The Christmas pudding is very simple to make. 2. Mix all of the ingredients together and allow to sit overnight. 3. Place in a well-greased 2lb (820ml) pudding bowl. 4. Cover with parchment/greaseproof paper, then a tightly fitting lid and a layer of tin foil before tying with a string. 5. If steaming in a saucepan - place the pudding bowl into a large saucepan half filled with water, place the lid on and bring to a boil then reduce to a very gentle simmer and steam for 6 hours, making sure to keep an eye on the water and it doesn’t boil dry. 6. If steaming in a slow cooker - place the pudding in the slow cooker, half fill with cold water, cover and set to a High and slow-cook for 8 hours. 7. After the cooking time has elapsed remove the pudding from the water and allow to cool in the bowl. 8. The pudding can be stored in the bowl in a cool place until you're ready to use it. 9. If gifting, remove from the bowl and wrap in greaseproof paper and tin foil. 10. On Christmas morning, you can reheat the pudding either in the microwave or you can steam it in a large saucepan of water (as per the cooking method) for a further hour until thoroughly heated through. Serve with custard, cream or brandy butter. 11. Mmm, Scrummy!!!
