Learn how to make SHITAMACHI Okonomiyaki! This is the ONLY source of ENGLISH instructions for this dish, on YouTube! I lived in the area for years, and I show you exactly how this is REALLY done, in Osaka's Shitamachi area! This is different from Hiroshima Okonomiyaki, and even from, "normal," okonomiyaki that is found throughout Japan! I give you a TRUE insider's view! It rocks! • Traditional Okonomiyaki Recipe (Japanese C... Ingredients and amounts (Japanese & English both provided): 【材料(2枚分)】Ingredients for making 2 okonomiyakis ・キャベツ:250g cabbage ・豚バラ薄切り肉:200g sliced pork belly ・薄力粉:100g cake flour ・だし汁:150ml dashi (If making from powder, this will be 8g of power, which is 1 sachet.) ・塩、しょうゆ:各少々 a pinch of salt, a splash of soya sauce ・卵:2個: 2 eggs ・お好みソース、マヨネーズ、練りがらし:各適宜 : Okonomiyaki sauce, mayonnaise and karashi: to taste ・かつお節、青のり、紅生姜:各適宜: Katsuobushi, Aonori, and Red Pickled Ginger, also to taste. ※ A note on Yamaimo: while many people think that yamaimo is necessary in Okonomiyaki, it depends on the style you are shooting for. While Yamaimo does make the batter softer, it also gives it a heaviness (In Japanese, we call it, "dosshiri kan.") that we are trying to AVOID in this recipe. The absence of Yamaimo is entirely intentional here, and results in an okonomiyaki that is lighter on the palate. In the future, depending on the style, I will make other okonomiyaki videos that feature the inclusion of yamaimo.
