Rinse the lemons in water first and then wipe them very well with a kitchen towel or cloth. 2. Cut the lemons into pieces as per your choice and remove the seeds. Add salt and mix them well. Fill the lemons, in a jar or a container and keep it in sunlight or inside for 3 to 4 days. Keep shaking the jar timely every day. 3. After 3 - 4 days lemons will get soft. Then take a kadai/wok. Put water in it, add grated jaggery and suger. Take a boil, then add red chili powder, black salt, black pepper powder, carom seeds, roasted cumin seeds, and garam masala. Mix them well and keep stirring the mixture. 4. After 2 - 3 minutes add lemons and mix them well. After a boil, switch off the gas. Allow it to cool. 5. Once it is cools down completely, transfer it to a glass jar. Cover tightly with a lid. 6. 'Khatta Meetha Nimbu Ka Achar' is ready to serve with roti/parathas/dal-chawal. Khatta Meetha Nimbu Ka Achar is a balance of sweet and sour tastes. Khatta Meetha Nimbu Ka Achar is prepared with lemons, jaggery and spice powders. This yummy pickle is so very easy and quick to make. This pickle has a longer shelf life same as a traditionally prepared pickle. This is so simple to make and does not require much effort and time. This is full of vitamin C and it is very healthy. This pickle has great taste as well as it is good for digestion. So, try to make this pickle at home and enjoy it with your family. This recipe was made by a lovely mom – Vijay Haldiya. Tips and Suggestions by Mom Chef:- You can add hing/asafoetida (1/4 teaspoon) to enhance the taste and make it more flavourful. As this is a pickle, add a little more salt to it. Wash and dry the lemons before making the pickle. Keep lemon and sweetness ratio 1:1. You can skip sugar or jaggery as per your choice. This pickle can be preserved by the refrigeration method also.
