MIX VEGETABLE DHOKLA Ingredients 6-7 French beans 1 small carrot ½ cup purple cabbage, chopped ½ cup boiled and crushed green peas ¼ cup boiled and crushed corn kernels 2 cups gram flour Salt to taste ½ tsp turmeric powder ¼ tsp coriander powder ¼ tsp cumin powder 2 tsps ginger-garlic-green chilli paste ⅓ cup yogurt 1½ tbsps oil + for greasing ½ tbsps fruit salt Tempering 1 tbsps oil 1 tsp mustard seeds A pinch of asafoetida 2-3 green chillies, slit 8-10 curry leaves ½ tbsp sugar Salt to taste Garnish Chopped fresh coriander leaves Scrapped fresh coconut Method 1. Finely chop French beans and grate the carrot. 2. Take gram flour in a bowl, add salt, turmeric powder, coriander powder, cumin powder, ginger-garlic-green chilli paste and yogurt, mix. Add ½ cup water and whisk well. 3. Add carrots, French beans, purple cabbage, green peas and corn and mix. Add oil, mix. Add fruit salt and 1 tbsp water and mix well. 4. Transfer the dhokla batter in a greased thali. Place this in a steamer and steam for 10-15 minutes. Allow to cool completely. De-mould and cut into squares. 5. To make the tempering, heat oil in a nonstick pan. Add mustard seeds and once they splutter. Add asafoetida, green chillies, curry leaves, sugar, salt and ½ cup water and mix well. Cook till the sugar dissolves and evenly pour it over the dhokla. 6. Garnish it with coriander leaves and scrapped coconut. Serve.
