Banana Bread 2 C Oat flour 2 tsp Baking Powder 1 tsp Baking Soda 1/2 C Rolled Oats 1/2 tsp salt 2 large very ripe Bananas 1/4 C Almond butter or other but or seed butter 1/2 C Coconut Sugar 2 tsp Apple Cider Vinegar 1 tsp Vanilla Extract 2 flax eggs **see notes Tofu for sushi bowl 1/2 C tofu 1 tsp sesame oil 1 Tbsp soy sauce Sushi bowl assembly Sushi rice rice wine vinegar (optional) shredded carrots shredded cucumbers sliced avocado nori sheets siracha mayo (optional) vegan kimchi (optional) black sesame seeds (optional) Ceviche 1 small sliced Green bell pepper 1 C diced tomato 1 C diced cucumber 1/2 C sliced red onion (optional) Juice from 1-2 limes 1/4 C fresh chopped cilantro S+P to taste drizzle of olive oil NOTES: For 1 flax egg, combine 1 Tbsp of ground flax meal with 3 Tbsp of water.
