TUBA… NOT FROM COCONUT TREES! 😱😱 A random conversation lead me to find out that locals in Lingayen, Pangasinan make tuba out of nipa. Intrigued, myself and Kumander Daot made our way to this municipality along the north central coast of the Province. Roaming around, we met Kuya Rolland, who took us on a journey to find this "natural elixir". First and foremost, I didn't know exactly how it would be harvested. But turns out, it is very similar to getting tuba from a coconut tree! The root of the nipa that leads to a fruit sappling is cut, and then covered with a bottle to harvest the tuba sap that gently drips out. The root is cut everyday, and usually last for about a month and a half. The liquid is very sweet when freshly harvested... literally like pure sugar! In fact, locals told us they use it for making bibingka! But, if you wait till later in the day... Ahh yes, that smooth not as sweet and slightly alcoholic taste exposes itself. How could I describe this... it is sort of like sprite, but without any bubbles. Definitely a different taste to coconut tree tuba, but certainly a similar style of sweetness.
