Citrus fruits make desserts especially aromatic, and when you bake these scones, you'll feel pure happiness—the entire house will be filled with a delightful citrus aroma. Ingredients: Cake flour: 240g Raw cane sugar: 65g Baking powder: 2 teaspoons (8g) Rose salt: 1/4 teaspoon (1g) Vegan butter: 110g Zest of 1 orange Coconut milk: 115ml Orange juice: 77g Dried cranberries (soaked in warm water for 5 minutes): 40g Instructions: Wash the orange and grate the zest, avoiding the white pith. Mix the zest with the raw cane sugar and rub it with your fingers to release the citrus oils. Then, add the flour. Cut the vegan butter into small cubes and rub it into the flour mixture with your hands until it resembles coarse crumbs. Leaving small butter pieces will enhance the texture. Add the baking powder, salt, and soaked cranberries. Mix well, then pour in the orange juice and coconut milk. Avoid kneading to prevent gluten formation—just mix until combined. Lightly flour a silicone mat, place the dough on it, and gently press it into an 8-inch round disk. Sprinkle a thin layer of flour on top. Cut the dough into 8 equal triangular pieces and chill in the fridge for 30 minutes. Meanwhile, preheat the oven to 200°C (392°F). Brush the tops with maple syrup and bake in the preheated oven for 22-25 minutes. Let them cool before serving. Tips: Chilling the dough helps it firm up. For the best texture, reheat the scones at 180°C (356°F) for 3 minutes before eating.
