A one pot, protein rich and wholesome dish. Ingredients 300 Gms of Mince chicken 150 - 175 Gms of spinach 2 tbsp oil 3 tsp minced garlic 2 eggs 3 tsp cornflour + 2 tsp water for slurry 3 -3.5 cups of water/chicken stock 1 tbsp soya sauce 1 tsp vinegar 1 tsp pepper powder , Salt to taste Method - Heat a large pot on medium flame . Add oil . Once oil is hot add minced garlic and stir . Keep stirring or the garlic will burn around its edges . To get a uniform colour on the garlic keep stirring. Add minced chicken and mix well . The mince will tend to clump up so breaking it down as shown in the video is a must . Keep stirring . - Add black pepper powder and salt . We will be adding soya sauce which is also salty at a later stage . So for now add very little salt . Add hot water to the mince . Never use cold water. Cold water will toughen the meat . Bring the mince and water mixture to a boil. Lower the heat and let the mince cook . This should take around 10-12 minutes . -Meantime wash the spinach leaves thoroughly . Squeeze out the excess water and finely chop it up . After the mince is cooked , add the finely chopped spinach. Stir . Add soya sauce and vinegar . Mix again . - Take the cornflour and add water . Make a lump free paste . Add this paste ( slurry ) to the soup . Cornflour will help us thicken the soup. After you pour the slurry into the soup , you must immediately stir it all well so that the cornflour doesn’t stick to the pan bottom. Bring it to a boil . The soup would have thickened by now . Crack 2 eggs and whisk them properly . Pour these eggs into the soup like a stream and with the help of a fork keep moving it around in the soup so that the egg strands are formed . Please refer to the video for the technique. - Check for salt and serve it piping hot . Notes : This a a protein rich , low carb soup . Wholesome and nutritious . If only adult are consuming , finely chopped green chillies can be a great addition . Soya sauce and vinegar brands don’t matter . No substitute for spinach.
