For this delicious hot pot for two you will need: 400g Lamb, either steaks or cubed 3 medium potatoes 2 large carrots, peeled and chopped 1 chicken or lamb stock cube in 200 mls boiling water. 1 large onion roughly chopped 2 tbsp Worcestershire sauce 1 tbsp flour 3 bay leaves lg knob of butter olive oil Put 2 tbsp olive oil and a good knob of butter in a frying pan, let the butter melt then add the lamb, fry for a couple of minutes on each side then remove from the pan. Add the onions, carrots and bay leaves, cook for a few minutes until they start to soften. Put the stock cube in a jug with 200mls boiling water and then add to the pan, cook for around 10 minutes then sprinkle the flour over, stir well, add salt and pepper and the Worcester sauce. Put the lamb back in the pan and let cook for another 5 minutes. Peel the potatoes and slice evenly, not too thinly. Put the lamb and vegetables in the casserole dish, remove the bay leaves then layer the potatoes on top, sprinkle a little salt and pepper between each layer then finish with a little on top. Cover with a lid or foil and put into a pre-heated oven at 180° c. Cook for around 30 minutes and remove the lid then cook for a further 15 to 20 minutes.
