They are most popular in the Goa and nowadays kulkuls or kalkals is very famous in all over the country. its very appetizing snacks that appealing to think of them as shells or sugar curls. These Indian sweets are fun to make with the family; it takes time to roll each one with a fork or new comb so you might ask older kids or teens to join in. That way you'll be able to make a larger batch! They keep very well if stored in an airtight container, so you can make them ahead to enjoy for the holidays. Kulkuls are a traditional part of a sweets plate and ideal to give to friends and neighbors. You can also make them part of your snacks ingredients. 800 grams--All purpose flour 100 grams--Semolina powdered 200 grams--Sugar powdered 150 grams--Ghee 1/2 cup--Milk few drops--Vanilla essence STEPS 1 In a bowl, mix the flour, semolina, salt, sugar powder ,melted butter and mix well STEPS 2 Add milk and gradually add vanilla essence and knead into a smooth dough like a ball , cover with a wet cloth leave to rest for 20 minutes. STEPS 3 Take the dough and form into small sized balls. STEPS 4 Grease the back of a fork or a new comb with some oil. Flatten the ball of dough and press it onto the back of the fork or comb, forming a rectangle the length of the back of the fork tines. and gently roll back into curls something looks like shells and slightly press near the edge . The end result will be a tube-like curl with the ridges from the fork on it. Place the curl on a plate and work the remaining dough similarly until it is all used up. STEPS 5 Heat the oil in a deep, heavy-bottomed pan over medium heat. When hot, fry the kulkuls, making sure to turn them often until they are a light golden brown color. Drain and cool on paper towels. OPTIONAL IF YOU NEEDED MORE SWEET STEPS 1 Put the granulated sugar and water in a separate pan and cook until the sugar is fully melted and a syrup forms. STEPS 2 Add the cooled kulkuls to the sugar syrup and coat well. STEPS 3 Remove and allow the curls to sit on a plate until the sugar is encrusted on the kulkuls. STEPS 4 Let cool When fully cooled , you can store the kulkuls for a considerable amount of time if kept in an airtight container.
