What an easy, delicious, quick meal to put together on a week night. Chicken, cheese, sauce, what could be better. Use the number of pieces of chicken to fit your family. There are only 2 of us. These recipes can easily be doubled. Chicken breast, cut in half lengthwise salt & pepper to taste flour, enough to dredge the amount of chicken you have. 24oz jar of your favorite pasta sauce, or homemade 1 tsp garlic & herb blend seasoning 1Tbsp chopped parsley Mozzarella Cheese Parmesan Cheese Season chicken with salt & pepper to your taste. Lightly flour chicken. Heat pan with a drizzle of canola oil. Fry chicken until almost done, and golden brown. Remove to baking pan. Pour sauce in saucepan. Add garlic & herb blend and parsley. Spoon sauce over chicken. Sprinkle with grated parmesan. Bake 375 degrees for about 15-20 minutes. Remove from oven. Cover with mozzarella cheese. Bake a few more minutes until cheese is melted. Cheesy Bread 1 loaf soft french bread, cut in half (for half loaf use the following, double for whole loaf) 1 stick softened butter, 1 1/2 tsp chives 1 Tbsp parsley, chopped 2 Tbsp mild cheddar 2 Tbsp sharp cheddar 2 Tbsp mozzarella 1 Tbsp grated parmesan Mix all ingredients well. Spread on bread. Bake 400 degrees about 10 minutes or until cheese is melted. Enjoy!
