This video will show you how to do it. ⬇️⬇️English recipe follows ⬇️⬇️ 咁樣先係冬瓜盅 迷你冬瓜盅 材料: 迷你冬瓜一個(約2斤) 急凍大蝦仁3隻 急凍帆立貝3隻 急凍帶子3粒 急凍蜆肉20粒 蟹柳3條 金華火腿20克(已切粒) 薑一小舊 蛋白一隻 程序: 1. 預備一隻碗,用來垂直放穩冬瓜,預先在底部挷好繩子,貼好膠紙固定繩子,放在煲外,準備冬瓜蒸好時可以容易取出。 2. 預備一個煲,可以完全放好冬瓜,能蓋好蓋。 3. 冬瓜,清水洗淨表皮。 4. 冬瓜,切出2吋的一邊,刮出冬瓜囊,囊放碗內。 5. 冬瓜,起出約一吋的冬瓜肉,放在另一隻碗內,清水洗乾淨表皮。 6. 冬瓜及碗,放煲內,繩子置在煲外,在煲內加入大滾水,冚好蓋,放好繩子在煲的頂部。 7. 大火煲滾冬瓜,蒸15分鐘。 8. 冬瓜肉,切碎,放碗內。 9. 薑,洗乾淨,拍鬆,放冬瓜肉內。 10. 冬瓜已蒸了15分鐘,熄火,檢查是否已蒸熟。 11. 冬瓜仍未蒸熟,加入大滾水,放好繩子,繼續大火蒸15分鐘。 12. 另一邊,大火在鑊內,烘一烘薑,加入冬瓜肉及適量水分,大火滾起。 13. 冬瓜已完全蒸熟,小心取出它。 14. 冬瓜湯已滾了大約15分鐘,取出薑片,加入已洗乾淨的金華火腿,大火滾起。 15. 在湯內,加入帶子及蝦仁,大火滾起。 16. 加入調味料: a. 鹽1/6茶匙 b. 糖半茶匙 加入適量生粉芡,大火滾起。 17. 轉慢火,打勻蛋白,加入湯內。 18. 在湯內,加入蟹柳,大火滾起。 19. 湯,小心放入冬瓜內。 20. 完成,可享用。 Mini winter melon soup Ingredients: Mini winter melon 1 No. (About 2 catty) Frozen shrimps 2 Nos. Frozen scallops (large) 3 Nos. Frozen scallops (small) 3 Nos. Frozen clams 20 Nos. Crab sticks 3 Nos. Jinhua ham 20g (already diced in cubes) Ginger (small) 1 No. Egg white 1 No. Steps: 1. Get ready for a bowl, which is to be used to perpendicularly put the melon in. Tie the bowl properly with a string at the bottom, fix the string with adhesive tape. The string is to be put outside a pot, in order to take out the bowl from the pot easily when the melon is steamed well. 2. Get ready for a pot, which the melon can be put inside and totally covered up. 3. The melon, rinse the skin with tap water. 4. The melon, cut 2" from one side. Remove seeds. Scoop the flesh and put in a bowl. 5. The melon, take out 1" of the white flesh. Put in a bowl. Rinse the skin thoroughly. 6. The melon and its bowl, put in the pot, put in the bowl. The strings are to be put outside the pot. Add in boiled-up water in the pot. Cover it up. Strings are to be on top of the pot. 7. Heat up the melon at high flame and steam for 15 minutes. 8. The flesh of melon, chop well. Put in a bowl. 9. Ginger, rinse with tap water. Beat well. Put in the flesh of melon. 10. The melon has been steamed for 15 minutes, turn off fire. Check if it has been steamed well. 11. The melon has not been steamed well, add in boiled-up water. Put the strings properly. Continue to steam at high flame for 15 minutes. 12. On the other side, heat up a wok at high flame. Fry the ginger. Add in the melon flesh and appropriate amount of water. Heat up at high flame. 13. The melon has been totally steamed well, take it out carefully. 14. The melon soup has been boiled for 15 minutes, take out the ginger. Add in the rinsed jinhua ham. Heat up at high flame. 15. The soup, add in scallops and shrimps. Heat up at high flame. 16. Add seasoning: a. Salt 1/6 tsp b. Sugar 0.5 tsp Add in appropriate amount of tapioca sauce, heat up at high flame. 17. Turn to low flame, beat well the egg white. Add in the soup. 18. In the soup, add in crab stick. Heat up at high flame. 19. The soup, is to be poured into the melon carefully. 20. Complete. Serve.
