RECIPE: Cheddar Bay Chicken Pot Pies **Use 4 (12oz) ramekins Ingredients: 3 tablespoons butter 2 cups chicken, cooked and chopped 1/2 cup onions, diced 1/2 cup celery, diced 1/2 cup carrots, diced 1 cup chicken stock 1 can cream of chicken soup with herbs 1 box Cheddar Bay biscuit mix (such as Red Lobster) 1 1/4 cup milk salt and pepper to taste Directions: 1.) Preheat oven to 350 degrees. 2.) In a large saucepan, saute the onion, celery, and carrots until slightly tender. Salt and pepper to taste. 3.) Stir in the chicken stock and soup. Heat until bubbly. Fold in the chicken. 4.) Divide the chicken mixture evenly into the ramekins. 5.) In a mixing bowl, combine the biscuit mix and milk. Pour into each ramekin. 6.) Bake uncovered for 25-30 minutes or until golden brown on top. ENJOY!! *Serve with a dollop of butter on top!
