RECIPE: Cheesy Chicken Stuffing Pot Pies Use 4 (12 oz) ramekins Ingredients: 2 cups chicken, cooked and chopped 2 tbsp butter 1/2 cup white onion, diced 1/2 cup celery, diced 1/2 cup carrot, diced 1 (10 oz) can cream of chicken soup with herbs (such as Campbell's) 1/3 cup sour cream 1/2 cup milk 1/2 cup frozen peas, thawed 1/2 cup Colby cheese, shredded Topping: 1 (6 oz) box of stuffing mix (such as Stove Top Savory flavored) 1 1/2 cups boiling water 4 tbsp butter melted 1/2 cup mozzarella cheese, shredded Directions: 1.) Preheat oven to 350 degrees. 2.) In a large skillet, melt 2 tablespoons of butter and saute the onions, celery, and carrots until slightly tender over medium-high heat. 3.) Reduce the heat to medium and stir in the soup, sour cream, and milk. Heat thoroughly. 4.) Fold in the chicken, peas, and Colby cheese. Transfer the mixture to the ramekins dividing evenly. Set aside. 5.) In a bowl, combine the stuffing mix, 4 tablespoons of melted butter, mozzarella cheese, and boiling water. Stir well. Top each ramekin with stuffing mixture and pat down gently. 6.) Cover each ramekin tightly with foil and bake for 20-25 minutes. Serve immediately! Yummy! Enjoy!
