RECIPES IN THIS VIDEO: Red Beans and Rice: (I double this and freeze half) 1# red kidney beans - soaked and sprouted 1 # sausage (I use hickory smoked beef) 1 # chicken thighs (bone in skin on) 1 medium yellow onion chopped small 1 green bell pepper chopped small 3 stalks of celery chopped small 4 cloves of garlic minced Bone broth (enough to cover all ingredients in pot) 2 bay leaves 1 tsp thyme 1/4 tsp cayenne 1/2 tsp oregano 1/2 tsp pepper 1 tbsp parsley 2 tsp cajun season Salt Hot sauce Carmelize veggies on high sauté function in instant pot. Deglaze bottom of pot with a little bone broth. Brown chicken thighs. Add in all ingredients, mix, pressure cook for 45 mins, slow release 10 mins. 60 mins if you double the recipe. Serve over rice, garnish with fresh parsley or green onions. Rice and Gravy 2-3 lb. of beef (I used stew meat, or I like steak cuts) 1/3 cup einkorn flour 1 cup chopped onion 1 cup chopped green bell pepper ½ cup chopped celery 1/2 cup chopped green onions for topping 2 tablespoon minced garlic 1 teaspoon cajun season 1 teaspoon of dried rosemary 1 teaspoon of dried basil 1 teaspoon of dried thyme 2 bay leaves 3 cups bone broth (or more or less depending on the consistency you prefer) Hot sauce to taste Season meat with cajun seasoning to your liking. Set aside. Caramelize veggies in instant pot high saute function, deglaze pot with a little bone broth. Coat stew meat in einkorn flour. Add meat to pot. Add bone broth and spices. Pressure cook for 1-2 hours. Serve over rice or mashed potatoes. Garnish with green onions. Meatballs and Gravy over Mashed Potatoes Recipe: MEATBALLS 3 lbs ground beef 11/2 cup breadcrumbs from an old sourdough loaf 2 egg 1 large onion, diced 1/4-1/2 cup milk 6 cloves garlic, minced 1 1/2 t salt dash of pepper 2 tsp garlic powder 2 tsp cajun seasoning combine all ingredients well, form into tight meatballs, set onto a tray the half you will freeze, freeze on tray then throw into a bag for storing in freezer up to 3 months. thaw in fridge overnight before you’d like to cook. You can also cook them ahead and freeze them already cooked in the gravy. GRAVY (for half the meatballs, double recipe if you are freezing gravy for later along with the meatballs) 1/4 cup butter 1/4 cup flour 1 quart jar beef bone broth 1/3 cup cream/milk 1 tsp garlic powder 1/2 tsp cajun season 1 tsp salt couple pinces of pepper make roux with butter and flour, brown butter, whisk in flour, do not stop whisking, bubble for a few mins, slowly whisk in the bone broth, add cream and spices, then add meatballs to the pan and it will thicken as it simmers Garlic Mashed Potatoes potatoes, peeled & diced - 4-6 large potatoes 1/4-1/2 cup butter 1 cup full fat milk or 1/2 cup cream garlic salt to your liking Boil pototoes, strain, mash with butter, milk and garlic salt #homemaker #realfood #whatieatinaweek #nourishingmeals #simpledinnerideas #fromscratchcooking #traditionalfoods
