Cut the guanciale into small cubes and add into a cold pan with some olive oil. Set over medium heat. 2. Rinse and drain the shirataki noodles. 3. In a separate bowl, grate the cheese, add the egg, egg yolk, black pepper, and optionally add the corn starch. Mix well to combine. 4. Once the guanciale has crisped, turn off and let the pan and fat cool down a bit until it is warm. 5. Add the noodles into the pan and stir to coat in the grease. 6. Add the egg & cheese mixture and stir feverishly to mix. The mixture should become a creaming any thick sauce. If the eggs scrambled - the pan was too hot. 7.
