Her first time baking cookies. Ever. 🍪💙 She was diagnosed with Type 1 Diabetes at 7 months old in November 2023. She never got to experience baking before. Not once. Most kids do this by age 2. She’s almost 3 today. And this is her first time. November 2025: I discovered keto works for her. January 2026: She's finally baking. KETO BUTTER COOKIES (Double batch - makes about 40 cookies) INGREDIENTS: 4 cups almond flour 1 cup butter, softened (2 sticks) ⅔ cup powdered monk fruit/erythritol sweetener 2 teaspoons vanilla extract ½ teaspoon salt INSTRUCTIONS: Preheat oven to 325°F (163°C) Beat softened butter and powdered sweetener until fluffy (2-3 minutes) Add vanilla and salt, mix well Add almond flour gradually, mixing until a dough forms Shape cookies: Roll into 1-inch balls, flatten with fork in criss-cross pattern OR roll dough to ½-inch thick, cut with cookie cutters OR press into 9x13 pan, cut into squares after baking Place on parchment-lined baking sheets/greased baking sheet Bake: Sea level: 12-15 minutes until edges are lightly golden Mexico City/high elevation: 14-16 minutes until edges are lightly golden Cool completely on wire rack (they'll firm up as they cool) NUTRITION (per cookie): Calories: 85 Fat: 8g Protein: 2g Total Carbs: 2g Fiber: 1g Net Carbs: 1g ✨ Why this recipe can be perfect for Type 1 Diabetes: ✅ Predictable carbs - 1g net carb per cookie, easy to dose for ✅ Stable blood sugars - almond flour doesn't spike like regular flour ✅ Simple ingredients - no hidden sugars or surprises ✅ Kid-friendly - kids of all ages can help and eat together ✅ Batch-friendly - make lots, freeze extras STORAGE: Room temperature: 5 days in airtight container Refrigerator: 2 weeks Freezer: 3 months VARIATIONS: Add sugar-free chocolate chips (count carbs) Lemon zest for lemon butter cookies Almond extract instead of vanilla Dip in sugar-free chocolate after baking This is what food freedom looks like. 💙 Sisters baking together.
