These potatoes started as an experiment — grown from scraps last year. I had high hopes for this patch again… but sometimes the garden has other plans, and I’m so grateful that these scraps continued to give and bless me. With the plants dying back early and pests doing their thing, I knew these spuds wouldn’t hold up for traditional storage. I had planned to can them, but things didn’t go as expected and I had to blanch and freeze the harvest instead. I may still do a dry pack pressure canning video down the road if time allows. A viewer reminded me: "When life gives you lemons, make lemonade..." So, I guess this is me — making lemonade, one potato at a time.
