Add gond crystals in small batches. Fry on medium flame till they expand and turn airy. Crush them gently using a spoon. 🔸 Step 2: Toast the Seeds & Nuts In the same pan, dry roast peanuts, sunflower seeds, and sesame seeds till aromatic. Transfer to a bowl. 🔸 Step 3: Roast Sooji in Ghee Add remaining ghee to the pan. Put sooji and roast on low flame till it becomes golden and releases a nutty aroma. Stir continuously to avoid burning. 🔸 Step 4: Sweet Base Preparation Switch off the flame. Add palm sugar or jaggery while the mixture is warm. Stir well so it melts slightly and blends evenly. 🔸 Step 5: Combine All Ingredients Now add crushed gond, roasted nuts & seeds, fennel powder, and nutmeg. Mix everything thoroughly till the mixture looks crumbly but moist. 🔸 Step 6: Shape the Laddoos Take small portions in your palm. Press gently to form round laddoos while the mixture is still warm. If mixture feels dry, sprinkle 1 tsp warm ghee and mix again. 🔸 Step 7: Cooling & Storage Allow laddoos to cool completely. Store in an airtight container at room temperature.
