Let's chat on why we chose milk goats, why they were a good fit for our homestead and family and finally let's make a batch of goat milk "velveeta" cheese! Here's the recipe! 1 gallon goat milk 1/4 cup water 3 tsp citric acid 3/4 tsp baking soda 1 1/2 tsp good salt 1 Tbsp butter 4 Tbsp chedder cheese powder (put aside 1/4 cup of your goat milk to mix cheddar powder into) -Stir cheese powder into your 1/4 cup goat milk and set aside. -Dissolve citric acid in 1/4 cup water. Just keep stirring it til it's completely dissolved. Set aside. -Slowly heat milk to 140F -Line a colander with a flour sack towel or muslin or cheesecloth and put it over a bowl or pot to catch whey -Mix the citric acid in the water, once milk is up to 140* add citric acid, stir til you begin to see separation and set aside 5-10 minutes -Pour cheese curds and whey into pot, curds will stay in the cloth and the whey will strain through -Pick up cloth and rock it back and forth, like I show in video to strain the rest of the whey -Squeeze out as much whey as you can... I didn't squeeze hardly enough when I made the video -Add curds back to cheese pot and add butter, salt, baking soda and stir well (you may see a "puffing" or an expanding of the cheese... this is normal) -mix in the cheese powder and milk Begin heating the cheese mixture back up til you see the curds come together and it becomes a smooth mixture. If you want a looser cheese, you can stop as soon as it comes together or if you want a more firm, cuttable cheese continue to cook til it's much thicker. -Place in plastic lined loaf pan to chill if you want to be able to cut the cheese. -Use wherever you would use a melting cheese. Queso, macaroni and cheese, pour over broccoli, or over a favorite casserole... the options are endless!
