Just sweet enough to be an after dinner treat! Excellent nut clean out recipe, use any you want. You'll find easier recipes online - only stovetop or only oven. This hybrid method is from Chef John @foodwishes (I just love him!), I tried it once ages ago and have never looked back. Better result - no burnt patches, even coating on each nut and the candy is fully crisp and dry, not sticky. Pour yourself a cold beer and enjoy! - N x ❤️ –––––––––- Texan BBQ candied nuts NUTS* 1 1/2 cups pecans 1 1/2 cups almonds, raw unsalted (or toasted) 1 cup cashews, raw unsalted (toasted ok too) 1 1/2 tsp cooking salt / kosher salt (halve for table salt, increase by 50% for flakes) TEXAN SPICED CANDY COATING 25g / 1 1/2 tbsp unsalted butter 1/2 cup white sugar 2 tbsp water 1 tsp smoked paprika 1 tsp chipotle (slightly spicy, can sub with 3/4 tsp extra smoked paprika) 1/2 tsp EACH ground coriander, cumin, onion, garlic 1/2 tsp black pepper 1/4 tsp cayenne pepper, optional (for more spicy!) OPTIONAL: Sea salt flakes, for extra salt to taste DIRECTIONS Melt butter then add remaining candy coating ingredients, simmer gently 2 min stirring regularly. Toss very well onto nuts, bake 20 min at 180°C/350°F (160C fan) on foil + paper lined tray, tossing halfway. Break up while warm, fully cool. Pour yourself a beer and attack! Use any you want! Raw is better but honestly, even if roasted it works just as well, I even mix roasted and unroasted. But must be unsalted. Best to choose nuts similar size so they roast evenly. This combo is my favourite, but for convenience sometimes I just get a bag of mixed raw nuts.
