Follow me on instagram: vegangirl77 Vegan Tuna Salad: 1 can chickpeas drained and rinsed 1 celery stalk finely chopped 1 scallion finely chopped 1 heaping Tbls vegan mayo Mustard and relish to taste 1 Tbls nutritional yeast 1/2 lemon juice S&P to taste Mashed up garbanzo beans. It’s ok if there’s some big chunks. Add all ingredients and combine. Serve in a sandwich, salad or crackers like we did. Vegan Alfredo: 1 block firm silken tofu 1/4 cup nutritional yeast 1 Tbls basil, garlic powder and onion powder 1 juice of a lemon 1/4 cup vegetables broth or non dairy milk Season with salt and pepper to taste Blend all these in a blender Meanwhile boil water for your pasta. Add pasta 2 cups sliced mushrooms 1/2 onion chopped 2 garlic cloves minced Pinch nutmeg In a sauté pan add garlic and onion. Add mushrooms cook for about 8 minutes while pasta cooks. Add sauce and simmer for 5 min. Add pasta water if needed or more broth. Add pasta and nutmeg mix together. Feel free to add other veggies. Spinach would work nice but I didn’t have any. Serve and enjoy!
