Simple Sambar for Rice with readymade Sambar powder -Quantity & veggies according to your choice Ingredients (Cut all the veggies as shown in my video) -1/2 medium size bottle gourd (Lauki) -4 medium potatoes -1 carrot -1 onion -2 small purple brinjal -1/2 medium cauliflower -10 tender green beans -1 curry leaves -1/3 tsp turmeric powder -salt to taste -SOAK & COOK TOOR DAL -1/2 glass Toor dal -1/3 tsp turmeric -1/3 tsp fenugreek seed powder -Wash & soak toor for 1 hour, after 1 hour pressure cook by adding 11/2 glass water (as I shown in my video) turmeric, fenugreek seed powder, salt to taste -pressure cook 2-3 whistles, turn off the flame allow the pressure to reduce naturally. -set aside -CLEAN AND SOAK TAMARIND -golf size tamarind -2 cubes Jaggery -2 tbsp readymade Sambar powder -1 tsp hot chili powder (optional If you extra hot) -Clean and soak tamarind in warm water for 5 minutes -Blend, strain & remove pulp -Add Sambar powder, chili powder Mix and keep it aside LETS COOK -In a wide deep dish/kadai add enough water to cover veggies salt to taste, add drumsticks & potatoes bring it to a boil cook until potatoes are nice and soft -Add remaining veggies bottle gourd (Lauki), carrot,beans,onion petals, cauliflower, brinjal, cook for until all the veggies are cooked yet crunchy. -Add turmeric, tamarind, Jaggery & Sambar powder mixture stir well to combine simmer for 5-8 minutes -Now add cooked Toor Dal mix well and simmer for 5 more minutes -Turn off the flame SEASONING/TADKA -4 tbsp oil -2 tbsp mustard seeds -1/2 tsp cumin seeds -3 dry chilies -Heat oil add mustard seeds allow to pop, turn off the flame add cumin add dry red chilies Pour this over the cooked Sambar -Give it a quick stir -Serve with white rice & papad -Enjoy!!!
