Quick & Easy Vegetable Pulao One pot Meal -Serving-6 persons Ingredients -2 glass Basmati (I used INDIA GATE CLASSIC celebration pack) -1/2 cup cashew nuts -1/2 cup peanuts -1/2 cup grated coconut -5 glass hot water (1 into 2 for rice+vegetable) -Wash & soak basmati rice for 1 hour -After 1 hour strain and keep aside VEGETABLE CUTTING Cut to medium size please check my video -1/2 cup green tender beans -2 carrots -1/2 capsicum -1/2 medium cauliflower -1 potato GREEN PULAO MASALA (Spicy adjust according to your taste bud) -1 big onion -2 medium tomatoes -4-5 green chilies -10 small garlic cloves -1” ginger -handful coriander leaves -handful mint leaves -1/2 tsp homemade garam masala powder -1 tsp fennel seeds -1/3 tsp yellow powder -1/2 tsp hot red chili powder (optional) -4 tbsp oil -2 tbsp ghee -2 tbsp butter -Salt to taste -Transfer small chutney grinder (do or not add water ) make a smooth paste & squeeze 1/2 lime juice set aside -HOT BOILING WATER -5 glasses of water 21/2 tsp salt, 2 tsp sugar -Bring water to a boil and set aside BEFORE COOKING -Strain the rice and keep aside -cut all the vegetables -make Paulo green paste -Boil hot water mixture LETS COOK -4 tbsp olive oil -2 tbsp ghee -2 tbsp butter -Heat oil in a deep pan/dish add grated coconut, peanuts, cashew nuts sauté for few minutes until they are nice and fraught and slightly browned -Add prepared pulao green masala stirring often until the raw smell goes away and oil separates from the masalasAdd ghee -Now add all the chopped veggies stirring 5-6 minutes, close the lid and cook to 5 minutes -Now add soaked rice stir gently with rest of the ingredients so that the rice gets well coated with the oil or ghee -Add boiled hot water mixture stir gently cover the pot with a lid & cook until all the water is absorbed -Check a few times during cooking also add 2 tbsp butter on top cover & cook -Once the rice grains are cooked Turn of the flame, gently stir the rice & fluff them & let the rice stand for 5 minutes covered with lid -Service vegtable pulao with Raisins & apricot chutney, mango pickle or Raita papad. -Enjoy!!!
