“Sole Bhat” is a traditional, aromatic, and spicy one-pot Maharashtrian rice dish, popular as a comforting meal preparation. It is essentially a pulao made with rice, a blend of spices, Vegetables and often fresh green pigeon peas (tuvar) which are widely available in the winter season. Green pigeon peas are beneficial for heart health, digestion, and immunity due to their high fiber, potassium, and vitamin C content.
