Preheat oven to 160 degree Celsius. 2. Melt butter and set aside. 3. Put the wafer cookies in a Ziploc bag, seal it and crush the cookies with rolling pin. 4. Transfer the crushed cookies into a bowl, add sugar, salt and melted butter, mix with a spatula until combined. 5. Pour the mixture to a removable bottom pie pan. Press them to the pan tightly. 6. Bake in the preheated oven for 10 – 12 mins. Remove from oven and let it cool down. Cheese Layer 2:20 1. Add cream cheese and sugar (1) to a bowl, mix it with spatula, add mascarpone cheese, mix until smooth. 2. Whip cream and sugar (2) until 60%, add whipped cream to cheese mixture and mix until combined. Transfer to a piping bag. 3. Combine strong black coffee and kahlua in a bowl. 4. Pipe a thin layer of cheese mixture to the pie crust, dip Savoiardi biscuits in coffee and Kahlua mixture and arrange them over the cheese layer, pipe another layer of cheese mixture, smooth the surface, repeat the with a layer of Savoiardi biscuits and top with remaining cheese mixture. 5. Put the pie in the freezer for 2 hours. Coffee Cream Frosting 7:50 1. Add whipping cream, icing sugar and coffee to a clean bowl, whip until 85%. 2. Remove the pie from freezer and top it with whipped coffee cream and refrigerate for 1 hours. 3. Dust with moisture resistant cocoa powder serve immediately. -------------------------------------------------------------------------------------------- 提拉米苏派(8寸) 派壳 香草味威化饼干(意大利莱家威化饼) 120g 细砂糖 10g 盐 一小撮 无盐黄油(融化) 40g 奶酪馅 手指饼干 60-80g (手指饼干影片链接 • Savoiardi | Ladyfingers | 手指饼干 | Dessert A... ) 特浓咖啡 115g 咖啡酒 46g 马斯卡彭奶酪 140g 奶油奶酪(室温软化) 65g 细砂糖(1) 15g 淡奶油 85g 细砂糖(2) 15g 咖啡奶油 淡奶油 140g 咖啡液(沾手指饼干剩余的咖啡液) 12g 糖粉 28g 派壳 0:19 1. 烤箱预热160摄氏度。 2. 黄油融化备用 3. 把威化饼装进自封袋,用擀面杖把饼干压碎。 4. 把饼干碎到进盆里,加入细砂糖,盐,和融化的黄油。搅拌均匀。 5. 倒入活底派盘,把饼干碎压紧。 6. 放入烤箱,160度烤10-12分钟。取出晾凉。 奶酪馅 2:20 1. 把奶油奶酪和细砂糖(1)加入盆里,搅拌至融合。加入马斯卡彭,搅拌至顺滑。 2. 淡奶油和细砂糖(2)一起打发至6分发,把奶油加入奶酪糊中,搅拌均匀。把面糊装入裱花袋。 3. 把特浓咖啡和咖啡酒混合。 4. 挤一层薄薄的奶酪糊到派壳里,抹平表面,手指饼干沾咖啡液,把饼干铺在之前挤好的奶酪层上,在挤一层奶酪糊在手指饼干上,抹平,铺手指饼干,把剩余奶酪糊挤到手指饼干上,抹平。 5. 把派放冰箱冷冻2个小时。 咖啡奶油 7:50 1. 把淡奶油,糖粉和咖啡液加入盆中,打发至8-9分发(可裱花状态)。 2. 把派从冷冻柜取出,填上打发的咖啡奶油,抹成锥形,用抹刀刮出纹路。入冰箱冷藏一小时(让奶油稳定)。 3. 撒上防潮可可粉,马上食用。 ------------------------------------------------------------------------------------ This video has been uploaded to my YouTube channel only.
