Add the Earl Grey tea leaves. Turn off heat and steep for 10–15 minutes. Strain and let the cream cool completely before using. Basque Cheesecake Preheat oven to 260°C (fan off). Beat cream cheese and sugar until smooth. Add eggs one by one, mixing well. Mix in cooled Earl Grey cream. Add flour, cornstarch, and vanilla extract; fold gently. Pour into a lined 20–22 cm springform pan. Bake for 35–40 minutes until the top is deeply slightly burned. Let cool at room temperature, then refrigerate. Tiramisu Mascarpone Cream Whip the whipping cream until stiff peaks form. In a double boiler, whisk egg yolks and sugar until pale and fluffy. Fold in mascarpone until smooth. Gently fold in whipped cream. Add espresso shot and mix gently.
