Bittergourd side dish is an amazing recipe to turn the bitter gourd veggie into a delicious side dish. It is made in a healthy way with just 2 tbsp oil. Also in this bitter gourd curry the bitterness is taken out by boiling it with salt and turmeric. Karela is my favorite veggie and I like to try making it in new ways. In my homes it was always made with quite a good amount of oil. Whether it was karela fry or stuffed karela, a lot of oil was used as those dishes need to be made in more oil. But this is a great side dish that I made with lots of spices and a good curry. Try this out and let me know how do you like it. Recipe Ingredients FOR BOILING Bittergourd - 3 , big size Dry red chilli - 2 Water as required salt and turmeric - 1 tsp TOMATO PASTE Tomatoes - 3-4 medium Boiled red chilli - deseeded Garlic - 8-10 pc CURRY Mustard oil - 2 tbsp Cumin seeds - 1 tbsp Fenugreek Seeds - 1 tsp Onion - 3 medium (finely chopped ) Fennel seeds - 1 tbsp Turmeric powder - 1/2 tbsp Coriander powder - 1 tbsp red chilli powder - 1 tbsp (optional) Grated ginger - 1 tbsp salt as required water as required Garam masala 1/2 tbsp Dry mango powder - 1 tbsp Asafoetida - 1/2 tsp or a pinch Method 1. Boil bitter gourd roundels and dry red chillies in water with turmeric and salt for 8-10 min or until soft. Strain the bittergourds and red chilli and keep aside. 2. Make a paste of deseeded boiled red chillies, garlic and tomatoes in a blender. 3. Heat mustard oil, add cumin and fenugreek seeds and let them brown. Add onion and cook for 1-2 min on high. Add fennel seeds and saute until the onions are light brown. 4. Add turmeric powder, coriander powder, red chilli powder and saute few seconds to cook the spices. 5. Add tomato chilli paste and salt and cook for few seconds. Then cover and cook on low heat until tomatoes are cooked and the oil separates. 7. Add little water and mix everything nicely. Now add 1/2 cup water and mix and add boiled bittergourd. Mix and cook for a minute or two. Add garam masala, dry mango powder and asafoetida. Mix everything. 8. Add little water as per your liking for thin or thick gravy. Cover and cook for about 5 min. 9.
