This meat cut which is part of the pork shoulder is readily available at major grocery shops meat section packed in 2 or 4 pieces at least here where I live Down Under. This cut is also cheap which is another plus. I like this cut of pork because it is marbled (fat lined in between meat) which gives it more flavour and moist as it is seared on the pan. Pan searing makes it very convenient to cook as you do not need to go through the trouble of firing up your barbie (grill) to enjoy a steak. With the use of lots of aromatics (mixed ground herbs, rose mary, thyme and garlic) during the searing process and with basting, you can enjoy this juicy and really flavourful steak paired with butter sauted blanched carrots and broccoli.
