Rinse, drain and dry the chickpeas. 2. Melt the coconut oil in a roasting tray and add the chickpeas with the spices and seasoning. 3. Make sure the chickpeas are fully covered and roast for 30-40 minutes, checking on them every 10 minutes and shake them around so they're cooked evenly. Raw Chocolate and Orange Energy Balls 10 Medjool Dates, pitted 1 cup Unsalted Cashews Zest of 1 Orange 3 tbsp Orange Juice 2 tbsp Cacao Powder Optional - 1/4 cup Hemp Powder 1. Add all of the ingredients to a food processor and blend until the mixture sticks together. 2. Take 1 tbsp at a time and roll into energy balls. 3. Keep in an airtight container in the fridge until you travel. Vegetable Crudités 1/4 Cucumber 1 Carrot 1 Red Pepper 1. Slice into strips. 2.
