Is mein aloo (potatoes), matar (green peas), methi (fenugreek leaves) aur gobhi (cauliflower) ka perfect combination hota hai. 🛒 Ingredients (4 servings) 2 medium potatoes (aloo) – cubes mein cut kiye hue 1 cup green peas (matar) – fresh ya frozen 1 cup cauliflower florets (gobhi) 1 cup fresh fenugreek leaves (methi) – finely chopped 1 large onion – finely chopped 2 tomatoes – chopped ya puree 1–2 green chilies – chopped 1 tsp ginger-garlic paste ½ tsp cumin seeds (zeera) ¼ tsp turmeric powder (haldi) 1 tsp coriander powder (dhania powder) ½ tsp red chili powder ½ tsp garam masala Salt to taste 2–3 tbsp oil 2–3 tbsp water (if needed) 👩🍳 Method (Tareeqa) Step 1: Preparation Aloo ko peel karke wash karein aur cubes mein cut karein. Gobhi ko garam namak wale pani mein 5 minutes ke liye daal kar nikaal lein (cleaning ke liye). Methi ko achi tarah wash karke barik chop karein. Step 2: Masala Banana Pan ya kadhai mein oil garam karein. Zeera daal kar crackle hone dein. Onion daal kar golden brown hone tak bhunein. Ginger-garlic paste aur green chilies daal kar 1 minute bhunein. Tomatoes daal kar tab tak pakayein jab tak oil separate na ho jaye. Haldi, dhania powder, red chili powder aur salt daal kar mix karein. Step 3: Sabzi Add Karna Sabse pehle aloo daal kar 3–4 minutes bhunein. Phir gobhi aur matar daal kar mix karein. 2–3 tbsp pani daal kar cover kar dein. Low flame par 8–10 minutes tak pakne dein. Step 4: Methi Add Karna Jab aloo aur gobhi almost cook ho jayein, tab chopped methi daal dein. Achhi tarah mix karke 5 minutes aur pakayein. End mein garam masala sprinkle karein aur flame band kar dein. 🍽️ Serving Suggestion Garma garam roti, paratha ya puri ke sath serve karein. Upar se thoda butter ya fresh hara dhania garnish kar sakte hain. 💡 Tips Agar methi ki kadwahat kam karni ho to us par halka sa namak laga kar 5 minutes baad nichod lein. Thoda khatta taste ke liye ½ tsp amchur powder add kar sakte hain. Thoda crispy texture ke liye last mein 2 minutes high flame par bhunein.
