MASTER COOKBOOK RECIPE #111 STOVETOP BISCUITS Ingredients: 2 cups all-purpose flour 3 tsp baking powder 1-1/2 cups whole buttermilk 1 tsp salt 1/3 cup shortening (or room temperature salted butter) Non-stick skillet with lid Instructions: If the flour is lumpy, sift it with salt and baking powder; if smooth, whisk together in a bowl. Cut in shortening or butter until the mixture looks like pea-sized crumbs. Stir in milk gradually until dough forms. Lightly flour a counter, knead the dough 4-7 times, then flatten to 3/4 inch thick. Cut biscuits, arrange them in a nonstick skillet, cover, and cook on medium low heat until browned on the bottom and risen. Flip, cover, and finish cooking until they are done. Note: Buttermilk varies in thickness. Add it gradually when making biscuits, mixing after each addition. Stop once all flour is combined; avoid adding excess milk.
