Frikadellen: 1 - 1 1/2 lb ground beef 1 cup chopped stale bread 1/2 cup milk 1 medium onion 1 garlic clove 4/5 stalks of parsley 1 egg 1 tbs of yellow mustard 1 tbs salt 1/8 ts of paprika Avocado oil for cooking Soak cubed bread for 5-10 minutes in the milk. Drain the bread in the fine mesh strainer. Sauté onion and garlic until soft, Add all ingredients, except for the avocado oil to a mixing bowl. Knead everything with your hands roll the meat into balls and flatten them with your hands. Preheat the avocado oil over medium heat and cook Frikadellen on both sides for 7-8 minutes, or until it’s cooked all the way through. Make sure to not burn it Potato salad: 2 Lb potatoes as a Yukon Gold 1 medium onion (finely chopped) 5 pickles 1 cup Mayo 1 tbs Mustard Parsley (finely chopped) Chives (finely chopped) 1 tbs Salt 3 hard boiled eggs Wash potatoes and add them to pot of cold water. Bring to boil over high heat reduce the heat to gentle simmer, and cook for 35 minutes. In a small pot bring eggs to boil, and cook on low heat for 10 minutes. Cool eggs off in ice water, peel and chop them in small pieces. It small bowl combine one cup of mayo, a tablespoon of mustard and a tablespoon of white vinegar and steam it to combine. Drain potatoes and let them cool off to handle, peel them and cut them into slices. Put 1 tablespoon of salt over your potato, add chopped onions, and all other ingredients and gently mix to combine.
