Today any good grocery store will carry a large variety of mushrooms. One of my favorite one is white button mushrooms. Easy to clean, easy to cut, and easy to cook. My version is spiced lightly and goes very well for chapati or bread. The finished dish is semi dry. The choice of spices in this will make your taste buds sink !!! Recipe:- Ingredients :- .................................................... Dry Spice Masala Coriander Seeds - 1/2 tsp Cinnamon - 1 stick Cloves - 2 Dried Chili - 3 Fennel Seeds - 1 tsp Black Pepper - 1/2 tsp Dry grind the above mix and set it aside Fresh mushrooms - 200 gms. Big onion - 2 sliced Garlic - 6 , Shallots - 2 ( crush it together finely ) Spring onion Salt to taste To Temper :- Oil - 3 tbsp. Bay leaf Fennel seeds - 1/2 tsp Dried chili - 2 Method ;- Wash the mushrooms, and set it aside to drain the water. Slice the mushrooms. give it another rinse and drain the water for a few more mins. Dry grind the spice and set it aside as well. Heat oil and in bayleaf, dried chili and fennel seeds. Add in the onion , garlic paste . Stir a while before adding in the dry spice. Stir to combine , then add in the sliced mushrooms and stir. Cover and let it cook while water is released from the mushrooms. Stir again and cover it back until mushrooms are cooked. It will take 3 mins. to cook the dish. Oil will start to release and it will become dry masala. Serve it hot with chapatis or vegetable pulao or even bread.
