For Easy Demi: 3 TBL canola oil 1 TBL tomato paste 2 onions, minced 1 carrot, minced 4 oz. mushrooms, minced 3 garlic cloves, minced 1 TBL herbs de Provence 1 TBL miso paste 1 TBL flour 1 cup red wine 3 1/2 cups low sodium beef broth 1 1/2 cups low sodium mushroom broth 1 cup water For meat: 2 1/2 lbs. meat, sliced to medallions 1 TBL canola oil 1 cup water 3/4 cups cognac or sherry 1 recipe Easy Demi 1 tsp Worcestershire sauce Steamed rice and sliced scallions, to serve For Easy Demi: In a large pot cook carrots, mushrooms and onions in 2 TBL of oil until dark brown. Add the remaining oil, garlic, herbs, tomato paste and miso and fry until brown. Add in flour and cook for a minute. Add wine, both broths and water. Cook on medium-high heat for 30 minutes to 1 hour or until you’re left with about 2 cups. Strain solids out and refrigerate until needed. For meat: In a large fry pan, fry medallions in oil both sides until golden brown. Set aside in a clean bowl and repeat with all meat. Deglaze the bottom of the pan with water and scrape up the brown parts. Replace all meat and bring to a hard boil. Take off the heat and add sherry, and carefully light it. Once the flames dissipate, stir in your demi and reduce until thick and brown. Season to taste and finish with a pat of butter.
