Not a fan of chocolate but still looking for a sweet treat? Give these PB&J Crumble Bars a try! Layered with homemade raspberry filling and a peanut butter oat crumble, these bars are sure to be a favorite with the whole family. Ingredients: Filling 3 cups frozen raspberries ¼ cup pure maple syrup 1 Tbsp lemon juice 2 Tbsp chia seeds Crust & Crumble 1 cup oat flour (or flour of choice) 2 cups gluten-free old-fashioned rolled oats 1 cup peanut butter ½ cup pure maple syrup or date paste . 1. Preheat oven to 350 degrees F. 2. Line an 8×8-inch pan with parchment paper. In a medium saucepan, combine the raspberries, maple syrup, and lemon juice. 3. Simmer for 3-5 minutes, stirring frequently. The mix will thicken. 4. Remove from heat and stir in the chia seeds. 5. Set aside to cool while you make the crumble. 6. In a separate bowl, add the peanut butter and maple syrup. Stir until combined. 7. Add in oat flour and oats. Mix until a crumble starts to form. 8. Press 2/3 of the mixture into the bottom of the lined baking pan. 9. Pour the raspberry filling on top, adding the rest of the crumble to the top layer. 10. Bake for 15-18 minutes, until crumble starts to brown. 11. Top with fresh berries and peanut butter. 12. Wait until completely cool before slicing. 13. Enjoy!
