🍇Ingredients:  1 lb seedless red grapes 1 cup sugar zest of one lemon 1 tbsp lemon juice 1 tsp vanilla extract 🍇Method: Remove all of the stems from the grapes wash them really well and then cut them in half. Then add sugar along with lemon zest and give it all a good mix and let the fruit sit marinated in the sugar and lemon zest for at least an hour to allow the fruit to naturally soften and release its natural juices. Transfer the marinated grapes to a heavy bottomed pan and cook on medium heat, uncovered until the juices start to thicken making sure to store often this should take approximately 10 minutes. Then using the potato masher gently mash up the fruit and continue cooking this for another 10 to 12 minutes. Once the fruit has soften up, using a blender or immersion blender purée the jam until you get a thick syrupy consistency. Keeping the flame low I lemon juice and vanilla extract and cook this for another 3 to 4 minutes on low medium. Then turn the stove off and allow the jam to cool down completely before you transfer the jam to a clean sanitized air container. This jam stores well in the refrigerator for up to two months.
