Thank you! Recipe for: Grandma's Summer Manja with Eggplant and Peppers. It's So Delicious I Always Want More! Necessary products: 600 g of eggplant, peeled, cut into cubes and salted 700 g of red peppers, coarsely chopped 2 medium onions, thinly sliced 1 large tomato, peeled and finely chopped 4 cloves of garlic, finely chopped 1/2 bunch parsley, finely chopped 1 tsp sugar Salt to taste Black pepper to taste Red pepper to taste Oil Method of preparation: Pour oil into a heated pan. Add the onion and fry for about 1 minute. Then add the peppers and fry for another 7-8 minutes until soft. Add the eggplant, which has been well drained of the bitter juice, and mix. Cover the pot with a lid, lower the heat and simmer for 10-15 minutes, stirring occasionally. Add the tomatoes, garlic, parsley, sugar, salt, black pepper and red pepper. Pour about 300 ml. water and cover the pot. Let the manja simmer on moderate heat for 30-40 minutes. Finally, sprinkle with parsley and serve. Enjoy your meal!
