Ridge gourd and dal curry is a simple, comforting Mangalorean dish made with tender ridge gourd and lentils. It has a mild, slightly sweet taste from the vegetable, balanced with spices and coconut. This wholesome curry is light on the stomach and pairs beautifully with rice, making it a perfect everyday meal in coastal homes. Ingredients: 2 large ridge gourds (peeled and chopped) ½ cup toor dal (or moong dal) 1 cup grated coconut 2 dried guntoor red chilies 6 byadgi chillies Small piece of tamarind ½ tsp turmeric powder 1 small onion (optional, chopped) 8 garlic cloves 1/2 tsp mustard seeds 1 tsp cumin seeds 2 tbsp coriander seeds 12 pepper corns Salt to taste For tempering: 2 tbsp coconut oil 1/2 tsp mustard seeds 1/2 tsp asafoetida 1 red chilli Few curry leaves Method: Cook dal: Wash and cook toor dal until 3/4 done. add chopped ridge gourd and cook along with dal. Prepare masala: Grind coconut, dried red chilies, and tamarind, cumin, coriander, mustard, turmeric, onion, pepper and garlic, into a smooth paste. Combine: Add the ground masala to the ridge gourd and dal. Mix well and bring to a gentle boil. Adjust salt. Tempering: Heat coconut oil, add mustard seeds. Once they splutter, add asafoetida, chilli and curry leaves. Fry till aromatic and pour over the curry. Serving Suggestion: Serve hot with steamed rice. It also goes well with papad and a simple pickle for a complete Mangalorean meal.
