In Episode #29 we got Nonna Paolone teaching us how to make her delicious and healthy Italian Potato Salad. We have a special guest helping her today and it's her youngest child Laurie Paolone. Nonna's daughter was diagnosed with Stage 3 Pancreatic Cancer on April 4th, 2019. She underwent the complex Whipple Surgery on April 8th, 2019 and the surgeons and medical team were able to remove ALL of the Cancer from her pancreas. Laurie is currently undergoing 12 rounds of aggressive Chemotherapy because they found and removed 5 out of 20 lymph nodes with cancer while in surgery. Both the surgery and chemotherapy has taken a toll on her and her blood work is usually down. For example, her potassium is down. Laurie needs to keep her potassium up and eating lots of potatoes is the way to go. She can no longer eat fried foods because they removed 30% of her pancreas so she needs to eat healthy and Nonna's potato salad is very healthy. Watch to get the step by step instructions so you too can make this for your friends, family, or sick loved ones to enjoy. One important ingredient that Nonna always adds to their recipes is cooking with her heart. So, be sure when you make this you do it with all your heart. Enjoy!
