Season shrimp lightly with salt & pepper. Cook 1–2 minutes per side until pink. Remove and set aside. Scramble eggs (optional) Add a little oil if needed. Pour in eggs, scramble gently, then remove. Fry the rice Add remaining oil + butter. Add garlic; cook 20–30 seconds. Add peas & carrots; stir 1–2 minutes. Add rice, breaking up clumps. Cook 3–4 minutes until hot. Season Drizzle in soy sauce and sesame oil. Toss well. Combine Add shrimp and eggs back in. Stir in scallions and sesame seeds. Taste and adjust seasoning.
