Today I'm cooking vegetable soup, apple compote and baked potatoes. My Grandma's Baked Potatoes ------------------------------------------------- 10 large potatoes 2 large onions 150g Castello Blue Cheese Creamy 300mL Thickened Cream 1 Chorizo sausage (raw) 1.5 cup of shredded cheese (pizza blend) 4 tbs olive oil salt, pepper, sweet paprika Slice thickly (about 5mm) potatoes, onions and chorizo. Drizzle 2 table spoons of olive oil in the ovenproof dish. Create layer of potatoes (use half of potatoes), then layer of onions. Spread chunks of blue cheese and chorizo. Then cover everything with another layer of sliced potatoes (remaining half). Drizzle with 2 table spoons of olive oil, season with salt, pepper. Then cover up the dish and put in the hot oven for about 1h (or until potatoes are soft) at 220°C (428°F). Once potatoes are cooked, remove dish from the oven. Pour thickened cream and spread shredded cheese. Optionally you can also season with sweet paprika. Then return uncovered dish to the oven for another 5-10min (or until cheese is nice and brown). Serve on it's own or as a side dish. Can be reheated in the microwave on the next day and will still taste delicious.
