If you’d like to join Obi 🐱 and I as we bake our way through life, don’t forget to subscribe! @TokyoDough —————————— Lemon Tart (Tarte au Citron) Ingredients 🍰 175g flour 25g icing sugar 100g cold butter 1 egg yolk 1Tbsp cold water Pinch of salt 4 lemons (zest) 150mL lemon juice 5 eggs 225g caster sugar 125g heavy cream Recipe 🍰 1. Preheat oven to 200C 2. In a food processor, combine flour, icing sugar, salt, and butter and pulse until it resembles breadcrumbs 3. Add egg yolk and water, pulsing again until the dough starts to come together 4. Turn out onto a lightly floured surface and knead briefly to bring it together 5. Roll out the dough, then dock the base 6. Blind bake for 10min 7. Take out from the oven, remove beads and then cut off excess dough 8. Put back in for 10-15min to completely cook the bottom of the base 9. Let the pastry cool completely before removing from the tin 10. Whisk the eggs and sugar until pale and slightly thickened 11. Zest the lemons then juice them 12. Add both to the egg mixture and stir to combine 13. Stir in the heavy cream until smooth 14. Put the filling in the tart, then bake at 160C for 35min 15. Let the tart cool completely before serving (refrigerate for at least 2 hours, or overnight for best results) 16.
