Crispy chicken coated in a tangy, glossy sauce with vegetables and juicy pineapple – this Sweet & Sour Chicken is so easy to make at home and tastes even better than takeout. 📝 Ingredients For the Chicken: 400g chicken breast or thighs (cut into bite-sized cubes) 1/2 cup all-purpose flour 1/2 tsp sweet paprika 1 tsp mushroom seasoning (or chicken stock powder) 1/2 tsp garlic powder 1/2 tsp salt Cold water (just enough to make a smooth batter) Oil for frying (I used rice bran oil) *For the Vegetables & Pineapple:* 1 medium tomato (cut into chunks) 1 medium cucumber (cut into chunks) 1/2 yellow onion (cut into chunks) 2 spring onions (chopped for garnish) 1 cup canned pineapple chunks (with 2–3 tbsp juice reserved) For the Sauce: 2 tbsp minced garlic 1/2 tbsp minced ginger 4 tbsp chili sauce 4 tablespoons of ketchup 2 tbsp oyster sauce 4-5 tbsp soy sauce 1/2 tsp mushroom seasoning 1/4 tsp salt (adjust to taste) water 👩🍳 Instructions 1. Cut the chicken into small cubes. In a bowl, combine flour, paprika, mushroom seasoning, garlic powder, and salt. Add a little cold water and mix into a smooth batter. Coat the chicken pieces and let rest for 1 hour. 2. While resting, chop the tomato, cucumber, and onion into chunks. Slice spring onion for garnish. Drain the pineapple chunks and set aside, keeping a few spoons of the juice. 3. Heat oil in a wok. Fry the chicken in small batches until golden and crispy. Remove and set aside. 4. In the same wok, leave about 1 tbsp of oil. Add garlic and ginger, sauté until fragrant. 5. Mix the sauce ingredients in a small bowl (ketchup, oyster sauce, soy sauce, mushroom seasoning, salt, and a splash of water). Pour into the wok and let it simmer for 1 minute. 6. Add the fried chicken back in, toss to coat. Add the vegetables, pineapple chunks, and a little pineapple juice. Stir well. 7.
