The Traditional Bajan Conkie recipe is hereeeeeee!!!! Made with pumpkin, sweet potato, coconut and assorted spices, these pockets of heaven are usually made and eaten in Barbados. Bajans love a good Conkie. What do you call this in your country? Conkie Recipe 2 cups corn meal 1 cup grated coconut 3/4 lb grated pumpkin 1/2 lb grated sweet potato 6 oz melted butter or margarine 1 cup whole milk 1/2 water 1 egg (beaten) 3/4 lb brown sugar 4 ozs. raisins 1 tsp spice 1 tsp cinnamon 1 tbsp mixed essence 1 tsp grated nutmeg 1 tsp salt Fresh Banana leaves 1. Mix the coconut, pumpkin, sweet potato, sugar, spices, corn meal, and salt together in a large bowl. 2. Add the melted butter/margarine, and milk followed by the egg and raisins. Mix thoroughly by hand to combine. You should have a thick mixture that is not too watery and not too stiff. Add more corn meal if the mixture is not thick enough or add a bit more milk if it is too thick. 3. If you have banana leaves, wipe the leaves down with warm, soapy water. Then wipe off the soap. If you don't have leaves, parchment paper can be filled and then wrapped in foil as an alternative. 4. Strip the leaves from the stalk with a sharp knife then briefly singe them over an open flame to make them more pliable. Cut the leaves into individual 8" squares. 5. Add 1-2 scoops of your mixture into the centre of the banana leaf. Fold the leaf around the mixture, taking care not to rip the leaf. Make sure the filling cannot leak out and tie the wrapped conkie with kitchen Twine or a thin piece of banana leaf. 6. Steam the conkies on a rack over boiling water in a large saucepan for 45 minutes or 1 hour or until they are firm and the corn meal is no longer grainy. 7. Allow them to cool and enjoy!
