Anna's Real Kagiana or Strapatsada (Greek Scrambled Eggs with Fresh Tomato and Greek Feta Cheese)

Ingredients: 1 green chopped pepper 1/2 cup virgin olive oil 2 cloves garlic, finely minced 3 large ripe tomatoes (pureed & peeled) Salt 1 tsp sugar black pepper Method: in a large frying pan over medium high heat, add virgin olive oil,tomatoes,green peper & garlic,along with the salt, sugar and black pepper. Cook over medium high heat until all of liquid has evaporated from the tomatoe mixture, about 10-15 min. Once the tomatoe mixture is dry, turn down the heat to medium , and add the eggs. Stir constantly to break up the egg, then frequently to allow the egg to cook through. The result should be a fairly dry mixture of similar consistency no large chunks of egg. Enjoy hot with crusty bread!!!! " My Little Greek Kitchen" Note:When tomatoes are out of season i always use to keep in my freezer fresh grated tomato sause from summer and place it, in an airtight container..
