Single Serving Pie Crust-Chicken Pot Pie Ingredients: Pie Crust 5 Tablespoons All Purpose Flour 1 teaspoon Sugar 1/8 teaspoon Salt 2 Tablespoons Cold Unsalted Butter 2 Tablespoons Ice Cold Water (if more is need add starting with 1 teaspoon) Chicken Pot Pie Filling 1 4 oz Cooked Chicken Breast 1/2 cup Cooked Mixed Vegetables 1 Tablespoon Butter 2 Tablespoons Flour 1/4-1/2 cup Milk Salt & Pepper to taste In a small bowl add flour, sugar and salt and mix. Add butter and mix until you get small pea size crumbs. Start by adding 2 Tablespoons of water and mix together if still dry slowly add more water starting with a 1 teaspoon until mix turns into dough. Once you can form a dough ball roll unto a piece of plastic wrap form into a dish and sit into refrigerator to chill for 20 minutes. In a small bowl add cooked mixed vegetables and chicken breast chopped or shredded and set aside. In a small saucepan add 1 tablespoon of butter to melt then add flour and whisk or stir until for at least 1 minute to cook flour. Slowly begin adding 1/4 cup of milk if it's not smooth add another 1/4 cup to get a creamy smooth sauce. Pour mixture in bowl with chicken adding salt and pepper to taste and mix well. Preheat oven to 375 degrees F. Spray inside of a small individual baking dish and set aside. Roll out pie crust using a little flour just to keep from sticking. Roll dough out to be a little bigger than dish so you can fold it over before cooking then gently add into dish. Using a fork prick the inside of the dough to keep from rising while cooking. Add filling to dough and fold over excess dough to cover and close pie. Use 1 egg and 1 tablespoon of water to cover the outside of the dough to get a golden brown crust. Also insert little slits to give the steam somewhere to release while cooking. Bake for about 30-35 minutes until golden brown. Let sit for about 5 minutes before serving.
