This roasted beet salad is my go-to recipe — sweet roasted beets, fresh herbs, zesty lemon, garlic, and crunchy walnuts make the perfect combination. I use 2 pounds of fresh organic beets from Natura Corner, farm-grown and packed with nutrients. Roasting the beets brings out their natural sweetness, making this salad irresistible! Ingredients: 2 pounds red beets (medium or small) 1 red onion, thinly sliced A handful of fresh dill A few sprigs of parsley 200 g walnuts, chopped medium Juice of ½ large lemon 2 cloves garlic, grated 1 tablespoon olive oil Pinch of salt How to Make Roasted Beet Salad: Roast the beets: Wrap each beet in foil. Bake at 220°C for about 50 minutes (check after 30 minutes). Prepare the salad while beets cook: Slice onion, chop dill and parsley, and mix together. Make the dressing: Add walnuts, lemon juice, garlic, olive oil, and salt. Mix and let marinate while beets roast. Slice roasted beets: Peel and cut into ½ cm rounds, then into sticks. Combine: Add beets to the bowl with onion, herbs, and dressing. Mix well. Serve & enjoy: Eat fresh or chill in the fridge for one hour — the flavors develop even more. Tips & Tricks: Wrap each beet carefully to avoid burning. Medium walnut pieces give the perfect crunch. Adjust lemon and garlic to taste.
