The batter is fluffy and buttery, the peaches become soft and aromatic, and the caramel ties it all together like a "tiny sweet poem," as I like to call it. ⚠️ About My Experiment: In this video, you’ll see I baked the cake directly in a cast-iron skillet (without parchment paper). It was a bit of an experiment! While it tasted amazing, the caramel "decided to stay stuck" to the pan. 💡 My tip for you: If you want a perfect release, use a regular baking pan lined with parchment paper at the bottom! I invite you to try it—whether with peaches, apricots, plums, or even sour cherries! 📝 INGREDIENTS For the Batter: 4 eggs 150g flour 120g sugar 130g soft butter (room temperature) 2 heaping tsp baking powder 1 tsp vanilla extract A pinch of salt 8-9 peaches (or your favorite fruit) For the Caramel: 150g sugar 20g butter 👩🍳 INSTRUCTIONS The Caramel: In a pan, melt the sugar over low-medium heat. Once it turns golden amber, add the butter and stir energially with a wooden spoon until melted. Pour the caramel immediately into your baking pan (21cm / 8-inch diameter) lined with parchment paper. The Fruit: Cut the peaches in half (remove the pits) and arrange them over the caramel, cut-side up. The Batter: Mix the soft butter with the sugar and vanilla until it becomes creamy. Add the eggs one at a time, mixing well after each. Finally, gently fold in the flour, salt, and baking powder. Baking: Pour the batter over the peaches and smooth the top. Bake in a preheated oven at 180°C (350°F) for about 40 minutes. The Flip: Remove the cake from the oven and let it rest for exactly 20 minutes.
